With the opening of STRIPSTEAK at Mandalay Bay Resort and Casino, Michael Mina unleashed his first steak house project on Las Vegas. STRIPSTEAK offers all-natural, certified Angus Beef and American Wagyu cuts of beef, all cooked over wood. Other STRIPSTEAK specialties include Slow-Poached Prime Ribs cooked in their own juices for eight hours, American Kobe Beef Short Ribs with Horseradish-Celeriac Puree and Red Wine Jus and Salt-Grilled Maine Lobster with Risotto and Sweet Corn Sauce.
STRIPSTEAK at Mandalay Bay is a truly unique Las Vegas steak house in that it utilizes innovative equipment to yeild new variations on traditional steak house fare. STRIPSTEAK employs two twelve-foot wood-burning grills, each with separated chambers to allow for STRIPSTEAK's assortment of steaks to cook over several different flavors of wood each night. Also, six circulating machines operating in STRIPSTEAK's kitchen allows the chef to cook under low temperature conditions for slow poaching of meat. The Slow-Poached Snake River Farms Beef Ribs prepared by this method will be cooked in oils, butters and juices for eight hours to absorb all the flavor before being tranfered to the wood-burning ovens to finish.
